Iran-Made System Determines Amount of Gluten in Flour, Wheat
“Separating gluten from flour is one of the most important challenges in flour laboratories. We have made a gluten-washing machine to settle this challenge. Separation of gluten from flour is done by washing the sample,” said Seyed Ahmad Heydari, the managing director of the knowledge-based company.
“This machine not only washes at a fixed time and conditions, but also allows the user to wash two samples at the same time and separate their gluten to save time,” he added.
Noting that the machine washes two flour samples at the same time and separates their gluten by using 300 cc of distilled water containing 2% table salt, Heydari said, “After separating the gluten and placing it in a gluten dryer or gluten machine, under controlled temperature, the wet gluten is converted to dry gluten and the actual weight of gluten without water is obtained.”
Gluten flour is a fine light tan coloured powder obtained by drying freshly prepared wet gluten separated from high quality Australian wheat flour.
It is generally used in bread recipes where you need to boost the gluten content of the flour being used — flours such as rye so that they can hold yeast gases and rise.
