Speaking to Iranian media, Sahar Zamani Moghadam, the managing director of Samen Fanavar company, said that quinoa is known as vegetable caviar in the world as it is a good source of fiber, iron and all the essential amino acids needed by the human body.

She also said that quinoa is rising up the popularity charts as a food staple and is considered a seed (vegetable) but is eaten like a grain.

“Considering that this product is new, it is currently unrivaled while the target population for it in the country is estimated to be 20 million people,” Zamani Moghadam said.

The researcher explained that the plant is good for people with diabetes because it is a source of proteins that the body needs and the type of glycemic or blood sugar it contains, which are good for diabetics.

She explained that their product can replace rice in diabetics’ diet, adding that it also does not contain gluten which makes it good for people who cannot use products that contains gluten and grains such as wheat and barley in their diets.

Samen managing director added not only it is rich in fiber, iron and protein, but also it is sold for lower prices than rice, that is why it can be a good option for households.

“Using the partnership and investment of Saman Health Research and Technology Fund, we were able to cover part of the costs of product’s purchase, processing and peeling, milling and production of quinoa flour…,” Zamani Moghadam concluded.
